Pre Workout Protein Pancakes

Hey Lovelies!

I've been getting back into the gym lately, and found I've been struggling with having enough energy to complete my workout. My trainer suggested having protein pre and post workout and its been working a treat! 
For my pre workout meal, I use 2 scoops of protein powder in either oatmeal or I will make some delicious fluffy pancakes packed with chocolatey protein powder. Eaten about 30-40 minutes prior to training. Recipe for yummy chocolatey protein pancakes below:




Ingredients:
1 cup flour 
2 scoops of protein (I use Healthy Chef)
2 Tablespoons of Psyllium Husk (Optional)
1 cup of coconut milk
2 Tablespoons of maple syrup
1 Teaspoon of Vanilla Essence
2 Eggs

  • Start by separating your egg whites from the yolks and whisk the whites until stiff peaks - set aside.
  • Add the remaining wet ingredients to your yolks and whisk until well combined.
  • Sift the dry ingredients into the yolk mixture and mix well.
  • Lastly, gently fold in the whites trying not to loose any of the air.
Cook the pancakes in a hot frypan with a little coconut oil to stop them from sticking and enjoy with some maple syrup, almond butter, and berries!
YUM!
(Remember don't flip the pancakes until little air bubbles form on the top otherwise they may break when your flipping them)
